Ingredients
- 2 Tablespoon oil
- 1 Cup medium onion diced
- 1 Cup red and green peppers diced
- Salt
- Black pepper
- 4 boneless, skinless chicken breasts
- 1 Cup grated mozzarella cheese shredded cheddar
- 2 Tablespoon 6-gun grill spice
Method
- Preheat oven to 180°c
- In a large pan heat oil on medium
- Add onions and peppers and cook until soft, then remove from pan
- With a sharp knife create a pocket in each breast
- Stuff each with vegetable mixture
- Top with mozzarella
- Season chicken all over with 6-gun grill spice
- Place in oven tray and bake until cooked (+/- 25 min)
- Allow to cool and enjoy
