Sweetcorn Fritter


Ingredients

" 500g grated sweet potato

" 180ml (3/4 cup) milk

" 30ml melted butter

" 1 egg

" 125ml (1/2 cup) sugar

" 500ml (2 cups) cake flour 

" 5ml salt

" 2ml ground nutmeg


How to cook

" Melt butter and whisk in egg.

" Add sugar and stir.

" Sift in all dry ingredients.

" Add grated sweet potato.

" Add milk to make batter.

" Scoop table spoon of batter and shallow fry into a moderately heated pan, until browned on both sides.

" Sprinkle with sugar or cinnamon sugar.
