Brown Sugar Glazed Beef Tenderloin


Ingredients


  • 1 beef tenderloin (about 1 kg)
  • 3 tbsp brown sugar (packed)
  • 2 tbsp Dijon mustard
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ground thyme
  • 1 tsp ground black pepper
  • Salt to taste
  • Fresh herbs (rosemary or thyme) for garnish
  • Optional sides: Roasted vegetables, mashed potatoes, or rice


Method

  • Prep the Beef Tenderloin:
  • Preheat your oven to 180°C (350°F). Pat the beef tenderloin dry with paper towels. Season it generously with salt, pepper, garlic powder, and thyme.
  • Make the Brown Sugar Glaze:
  • In a small bowl, mix together the brown sugar, Dijon mustard, soy sauce, and olive oil until smooth and combined. This will be your glaze.
  • Sear the Beef:
  • Heat a large oven-safe skillet over medium-high heat. Add a little olive oil and sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.
  • Glaze the Beef:
  • Brush a generous amount of the brown sugar glaze over the seared beef tenderloin, making sure it's evenly coated.
  • Bake the Beef:
  • Transfer the skillet to the preheated oven and roast the beef tenderloin for about 20-25 minutes for medium-rare, or until the internal temperature reaches 55-60°C (130-140°F). Baste the beef with the glaze halfway through cooking for added flavor and a beautiful caramelized finish.
  • Rest the Beef:
  • Once cooked, remove the beef tenderloin from the oven and let it rest for 10-15 minutes before slicing to retain its juices.
  • Serve:
  • Slice the beef tenderloin into medallions, drizzle with any remaining glaze from the pan, and garnish with fresh herbs. Serve with your choice of sides, like roasted vegetables, mashed potatoes, or rice.
