Ingredients
- 1 can of Bull Brand corned meat
- 1 cup grated cheddar cheese (or any melty cheese of your choice)
- 2 medium potatoes, boiled and mashed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup cream cheese (optional, for extra creaminess)
- 1/2 cup breadcrumbs
- 1 egg, beaten
- Salt and pepper to taste
- Flour for dredging
- Fresh herbs (like parsley or chives), finely chopped (for garnish)
- Chili flakes or paprika for a dash of colour
Ingredients
- Cook the Filling: Sauté 1 chopped onion and 2 minced garlic cloves until golden. Add 500g corned meat, break it apart, then mix with 1 cup mashed potatoes and 1/2 cup grated cheese. Season with salt, pepper, and chili flakes. Set aside.
- Shape the Croquettes: Once cooled, shape the mixture into small ovals or rounds.
- Bread the Croquettes: Dredge in flour, dip in beaten egg, and coat in breadcrumbs. Double-coat for extra crispiness.
- Fry: Heat oil in a pan. Fry croquettes until golden and crispy, about 3-4 minutes on each side.
- Plate and Garnish: Arrange croquettes on a plate. Drizzle with spicy ketchup or sriracha mayo and sprinkle with fresh herbs, chili flakes, and paprika.
- Serve: Add roasted cherry tomatoes or a green salad on the side for extra colour and flavour.
