Chicken & Broccoli Bowl 


Ingredients


  • 3 Tablespoon oil, divided
  • 4 boneless, skinless chicken breasts
  • Salt
  • Black pepper
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. fresh thyme leaves
  • 1 Teaspoon crushed red pepper flakes
  • 3/4 Cup chicken broth
  • 1/2 Cup chopped sun-dried tomatoes
  • 1/2 Cup heavy cream
  • 1/4 Cup finely grated cheese (Parmesan, Mozzarella or Cheddar)
  • Torn fresh basil, for serving



Method

Heat oven to 180°c

In large oven proof pan over medium heat, add oil

Season chicken with salt and pepper (or desired spice) and cook

Remove chicken once golden brown

In pan over medium heat, add 2 tablespoon oil, garlic, red pepper flakes. Cook until fragrant (about 1 – 2 min)

Stir in broth, sun dried tomatoes, cream and cheese

Season with salt if required and bring to a simmer

Return chicken to pan

Transfer to Baking dish for 10 to 12 minutes

Dish into plate and enjoy on its own or with pasta.
